This arresting cheese is a blend of cow and goat’s milks, aged to crystalline perfection, then coated in barley malt and whisky. Testun al Malto’s homeliness belies its sophistication among flavored cheeses. It is deep, rich and spicy. The whisky is pleasantly peaty, which frisks up the goat’s milk.
