This washed rind goat’s milk cheese is a rarity. Made with organic milk, Cabriolait has subdued acidity, caramelized sweetness and is nothing short of delightful.
Belgian cooperative Het Hinkelspel, roughly translating to ‘The Hopscotch’, has been making cheese since the early 80’s. The cheese makers primarily use raw, organic milk, and a bacterium from the ripening cellars of the abbeys, for aging. Cabriolait is treated with regular brine washing, a treatment that yields a soft, pliable cheese that is mild but bright, with a nutty aroma.
