Since 1993, Domori searched for and has now found the world’s cocoa growing regions with the best varieties of cocoa for making chocolate. Domori has a unique approach to their chocolate, selecting, and roasting cocoa carefully and in small batches, a minimal amount of processing, and making their chocolate by hand as opposed to machine when possible. The result is Italian chocolate with a unique, genuine taste, aroma of the cocoa, and a very characteristic snap with each bite that is unique only to Domori.
Chuao is an extremely rare variety of cacao Criollo cultivated in the Hacienda San Jose since 2002. The beans, totally white, yield a very mild and round chocolate with hints of milk cream, honey and dried fruit.
