Single origin chocolate made from cacao grown on the highly fertile soil of the Sambirano Valley in Madagascar. There, the 635 hectares MAVA Plantation is divided into eight different farms. Our lot comes from the Cocoa of Excellence 2017 winning Ottange Farm which is the smallest of the eight farms.
Madagascan cacao is well known for its high acidity. Fossa’s roast highlights the distinctive orange notes and sought out the more elusive nutty and malty profile to provide balance.
