This 100% Special Reserve bar is made from cacao grown on small farms along the Ucayali River, on Peru’s eastern coast. The Ucayali River Cacao Cooperative works closely with hundreds of small farmers, helping them to survive by paying a premium for the wet cacao and carrying out the essential drying and fermentation processes with expertise and precision in their newly built facility. They also sort the cacao in a custom built sorting machine, to ensure it is ready to roast once purchased by a craft chocolate maker. For those reasons, these beans from Ucayali River Cacao are especially desirable for a bar with no sugar added, completely expressive of its terroir and fermentation.
