Most hot cocoa is alkalized, meaning the cocoa is washed with a solution of potassium carbonate–making it easier to dissolve in water or milk but also alters the flavor. By not Alkalizing cocoa, Goodnow is able retain more of the natural flavors and health benefits of eating cacao. You may need to stir a little more vigorously, but the flavor is unparalleled.
