This firm and unpretentious cow’s milk cheese from Menorca, in Spain’s Balearic Islands, is salty, buttery, and sweet at the finish.
Mahon Reserva is made from thermalized milk (gentler than pasteurization), and aged with care for 10 to 12 months. It is lovingly rubbed with olive oil in order to temper and enrich the flavor of the cheese.
