Craft & Origin
Bac Lieu sits on over 56 km of Vietnam’s southern coastline. During the dry season, saltwater intrusion from the East Vietnam Sea pushes into the Mekong’s river system, allowing salt farmers to channel high-salinity seawater into shallow earthen ponds for solar evaporation and crystallization. The practice has been documented for over a century; in 2020, the art of Bac Lieu salt-making was recognized as a National Intangible Cultural Heritage of Vietnam. Marou pairs this salt with Vietnamese coffee in a 44% milk chocolate base tied to their Ho Chi Minh City cafe location.
