Paški Sir DOP – Though little known outside the country, Paški Sir is one of Croatia’s most beloved cheeses. It is made exclusively on the tiny island of Pag with milk from the indigenous breed of sheep known as the Paška Ovca. Our producer Paška Sirana collects milk from 2500 of these low-yielding sheep (1/2 L per day), which feed on the salty grasses scattered throughout the rocky, windswept land. It takes milk from about 10-12 sheep in order to make 1 wheel. Full flavored, its crystalline paste develops notes that are pleasantly saline, sheepy, and butterscotchy without becoming too dry. Paški Sir received a Protected Designation of Origin (DOP) in 2019, officially recognizing the great importance of the cheese and the place in which it is made.
ChocoHigos® – ChocoHigos® are soft and luscious Pajarero figs hand dipped in dark chocolate. These figs, native to Spain, are juicy, delicate, and richly flavored. They are the perfect soft centers for these sophisticated chocolate treats.
Mostarda Pink Grapefruit Casa Forcello® – Hand-cut pieces of candied grapefruit come alive with a hint of potent mustard extract. Mostarda is a traditional condiment that balances sweetness and heat.
More about Michele Buster: For some people in the world of food, it isn’t about composing a dish or a cocktail, or overseeing a balanced wine list. For some people it’s just about one thing, one love amidst the trove of food and drink products. For Michele Buster, for the past 26 years, that one thing is cheese. Recently dubbing herself the Head Treasure Hunter when asked what she actually did, Buster has spent many years cultivating expertise in specialty foods of the Mediterranean. Over the past decade, she has worked alongside partner-formed Forever Cheese, to bring cheeses and specialty products from Italy, Spain, Portugal, and Croatia to the United States. When not sourcing products in Europe, Buster frequently travels across the United States, conducting classes and tastings for specialty stores and restaurants. A respected part of the cheese community, she is a member of the prestigious International Guilde des Fromagers. The PDO Sao Jorge Consortium in Portugal inducted her as an honorary member, and she was also recognized with an award from Murcia, Spain, for being the person who most stimulated the agronomy of the region. In 2019, on behalf of Forever Cheese, she accepted a Whole Foods Market Global Supplier Award for Raising the Bar for Quality. She was featured on the cover of Cheese Connoisseur magazine and most recently, was profiled by the Wine Spectator as a “One-Woman Flavor Crusade.”
