Timeless and tremendously tasty, these spiced tuna filets from Ati Manel offer a uniquely floral and equally decadent culinary experience.

They are made from pole & line caught Skipjack Tuna (the smallest species that make it to tin) by hand-carving them off the bone before sending them for a gentle steam and finally a bath in olive oil infused with aromatics, chili, and spices. They must first be tried on their own, but after you’ve done so, we’d invite you to pile the contents over a savory bed of smashed potatoes.

TASTING: rich, moist, delicate, floral
PAIRING: pinot grigio
SERVING: raw shallot, cornichons
INGREDIENTS: Skipjack Tuna, Olive Oil, Carrot, Cucumber, Piri-piri, Spices (Bay Leaf, Cloves, Black Pepper), Salt
