Drunken Devils

INGREDIENTS
- 24 large dates (pitted)
- 16oz Amontillado Sherry (or your fortified wine of choice)
- 6oz Withersbrook Blue
- 12 slices Guanciale (each cut in half)
- 24 toothpicks
INSTRUCTIONS
- Soak halved dates in sherry for at least 2 hours, or overnight
- Remove dates from sherry and preheat oven to 350 degrees
- Stuff each date with a generous crumble of blue cheese
- Wrap each stuffed date in a half strip of guanciale, piercing with a toothpick to hold in place
- Set stuffed, wrapped dates on a foil lined baking sheet
- Bake for 10-15 minutes, or until the guanciale is crispy and the blue cheese melty
- Remove from oven and allow to rest for 5-10 minutes, lest ye be cursed by a Drunken Hot Lava Devil
- Serve (eat as many as you can before your guests notice they’re gone)
