Craft & Origin
Almanacco is produced using only Frantoio olives from century-old trees, a rarity even in central Italy. These older groves yield fewer olives but offer greater concentration and natural complexity. Viola harvests early and mills immediately using a centrifugal press to preserve aromatic clarity and phenolic strength. The result is an oil shaped by age, patience, and restraint rather than yield or intensity for its own sake.
Flavor & Texture
Green and savory with artichoke up front, followed by almond and subtle spice. Long, persistent structure with a clean black pepper finish.
