Hailing from the Northwestern municipality of Cabrales, Spain and aged in natural caves for 2-5 months, Cabrales is a true small-batch artisan cheese. The high levels of humidity in the caves helps allow the blue molds to penetrate naturally, rather than by penicillium injection, lending its potent blue veins.
MILK: unpasteurized cow, goat, sheep’s milk
TASTING: strong, salty, dense, spicy
SERVING: with membrillo or honey to balance the intensity
PAIRING: fig jam, membrillo, sweet sherry, austurian cider
