Drunken Devils

INGREDIENTS

  • 24 large dates (pitted)
  • 16oz Amontillado Sherry (or your fortified wine of choice)
  • 6oz Withersbrook Blue
  • 12 slices Guanciale (each cut in half)
  • 24 toothpicks

 

INSTRUCTIONS

  1. Soak halved dates in sherry for at least 2 hours, or overnight
  2. Remove dates from sherry and preheat oven to 350 degrees
  3. Stuff each date with a generous crumble of blue cheese
  4. Wrap each stuffed date in a half strip of guanciale, piercing with a toothpick to hold in place
  5. Set stuffed, wrapped dates on a foil lined baking sheet
  6. Bake for 10-15 minutes, or until the guanciale is crispy and the blue cheese melty
  7. Remove from oven and allow to rest for 5-10 minutes, lest ye be cursed by a Drunken Hot Lava Devil
  8. Serve (eat as many as you can before your guests notice they’re gone)
