After the winter thaw, young bud-like growths are harvested by hand from the ends of branches and given a long soak in cold water. The resulting solution is infused with unique flavor and nutrient-rich chlorophyll. All it needs is pectin and sugar to create amber jelly that is delicious on a craggy english muffin or smeared on sourdough beneath a nutty slice of manchego.
