Fit for those who love intense and bold blues. The natural occurence of molds produces dispersed purple veining throughout, subtle crystalline texture, and assertive flavor.
Hailing from the Northwestern municipality of Cabrales, Spain and aged in natural caves for 2-5 months, Cabrales is a true small-batch artisan cheese. The high levels of humidity in the caves helps allow the blue molds to penetrate naturally, rather than by penicillium injection, lending its potent blue veins.
