Noia is renowned for producing Spain’s cleanest and sweetest cockles, and these are the ones Abel Álvarez chooses for one of Güeyu Mar’s most expressive tins. Instead of steaming, he briefly grills the cockles over birch, beech, and oak to add subtle smoke while preserving their natural tenderness. Timing is exact, long enough for the aroma to develop but brief enough to protect texture and sweetness.

The grilled cockles are then packed in Castillo de Canena Arbequina EVOO, whose fruity, buttery character melds with shellfish juices and smoke. A touch of habanero adds lift and warmth without overpowering the delicacy of the meat.
