Relatively new to the world of conservas, we think this fish is gonna stick. Stickleback have a lower caloric content than sardines, and more meat to boast. The flavor is stronger, but is well tamed by a bright and briney sauce. Tomato, vinegar, onion, bell pepper, white pepper, and laurel combine their forces to pickle the stickle.

TASTING: sweet, sour, salt, meaty
PAIRING: juicy red wine, sour beer, bright/acidic cocktails
