Description
Keller + Manni Chocolate is proud to introduce their hand-made dragées. A version of the popular recipe produced at The French Laundry, their dragées start with a macadamia nut that is caramelized to develop a balance of sweetness and roasted flavors. While the caramelized nuts remain hot, each is rounded by hand, chilled and tumbled in alternating layers of molten milk chocolate and feuilletine (thin flakes of crispy pastry). Next, the dragées are covered in layers of dark chocolate and finished with a final dusting of cocoa powder.
K+M Chocolate is a collaboration between Chef Thomas Keller and Italian olive oil producer Armando Manni.
