Johnty Tatham produces Lucid chocolate in the Coastal Wairarapa region of New Zealand from a remote farm location. He employs a rigorous bean-to-bar process using organically sourced Piura cacao from Joe Huachez in Peru. This deeply personal expression features hand-harvested mulberries from a century-old family tree located immediately adjacent to the chocolate kitchen. The berries are meticulously freeze-dried to preserve their concentrated tartness and integrated during the conching phase to ensure a seamless, moisture-free infusion. The chocolate production focuses on highlighting these bright, jammy aromatics through precise roasting and controlled conching processes. This technical approach yields a vibrant bar that celebrates original vision and familial heritage through the expressive medium of Piura cacao and estate-grown mulberries.
