Brought to the islands in the 1800s, guava has a complicated history in Hawaii. The fruit absolutely thrives on its banks, but sometimes too well. As odd as it sounds, one of the best ways to control guava population is to eat as much of it as possible. Once Manoa figured out how to easily incorporate this sweet/tart flavor into their chocolate, this bar quickly became a regular staple of the Flavors of Hawaii series.
