The So Co La Edition is a series of bars tied to Maison Marou cafe locations and ingredients that define those neighborhoods. This bar represents the District 7 location in Ho Chi Minh City, utilizing cashews sourced from southern Vietnam. Marou’s pastry team roasts and candies the cashews in-house before grinding them into a crunchy praline paste. This inclusion is integrated into a 65% dark chocolate base made from single-origin cacao beans sourced from the Tien Giang province. By managing the praline production from raw nut to finished inclusion, Marou maintains a technical contrast between the buttery cashews and the bright, fruit-forward acidity of the Mekong Delta cacao.
Flavor & Texture
