Giada Calzia, of Petricor, grows olives on her family’s farm of 8,000 olive trees, divided into several olive groves that span from Imperia up to Lucinasco, in Liguria. This olive oil is 100% Taggiasca, a cultivar that represents only 1% of Italian olive production. This olive oil is rare, not only in its origin, but in its layered profile and delicate nature. This olive oil is an expression of the Ligurian Terroir: only Taggiasca olives from selected plots are used. The olives are hand harvested and transported to the oil mill, defoliated, washed, and pressed the same day. This attention to detail and commitment to the craft, creates an oil that is uncompromising in its quality. In true Ligurian style, use this delicate and versatile oil on raw or cooked fish, on salads and vegetables, and in baking.
