Description
A traditional Swiss raw milk cheese produced in the Entlebuch UNESCO Biosphere. Rockflower is a hard alpine cheese crafted using time-honored methods to yield exceptional structure and authentic regional depth.
Craft & Origin
Cheesemaker Silvio and his team produce Rockflower at Mountain Dairy Kleinstein, located high above the village of Werthenstein in Central Switzerland. The cheese takes its name from the yellow alpine primrose that grows along the limestone rocks of Mount Pilatus. Made exclusively with raw cow milk from nearby mountain herds, the wheels are aged in regional cellars to cultivate a dense paste and natural protective rind.
Flavor & Texture
Notes of toasted hazelnut and wild alpine herbs with a smooth, firm texture.
How to Use
Shave over roasted root vegetables or serve in thin slices on a traditional alpine board.
