Friabile exposes everything—if the honey quality is poor, the flavor collapses; if the honey is exceptional, the aroma becomes radiant. Scaldaferro blends select Italian honeys and cooks the mixture slowly in antique copper kettles using a bain-marie, which protects aromatics and creates their signature airy brittleness.

They produce torrone only during the waxing moon, when the natural rise in atmospheric pressure supports better aeration and texture. Production also depends on ideal temperature and humidity, making each batch a reflection of environmental rhythms and old-world confectionery timing.
