Each tin is hand-packed in Cantabria by brothers Pablo and Álvaro Huidobro, whose small-batch methods have earned global acclaim. This set highlights three of their most expressive creations:
  • Sea Bass with Pesto: Bright, aromatic, and utterly distinctive — tender fillets of seabass gently cooked sous-vide and bathed in a fresh basil pesto that balances richness and herbaceous lift.
  • Tuna Encebollado: A nod to Spain’s home-style stews, this tender yellowfin tuna is simmered with slow-cooked onions and olive oil until savory, sweet, and deeply satisfying.
  • Mackerel in Olive Oil: A pure and traditional preparation that reveals the clean, meaty character of wild Cantabrian mackerel, preserved in exceptional olive oil for natural richness.
Together, they tell a story of contrast and care — from bright and modern to timeless and elemental — all crafted in micro-batches so small they could fit on a home stove.

Spain’s smallest cannery. One of the world’s finest.
