Craft & Origin
Colleruita is produced from Moraiolo, Frantoio, and Leccino olives grown in the hills surrounding Assisi and Spoleto. The D.O.P. designation guarantees origin, varietal composition, and traditional production within this defined region. Viola farms organically, using biodynamic principles and intercropping with legumes to strengthen soils and limit yields. Olives are harvested early and milled immediately using a centrifugal press to preserve freshness and phenolic power.
Flavor & Texture
Decidedly green and bitter with artichoke and fresh olive character. Persistent, peppery, and structured.
How to Use
