Craft & Origin
Il Sincero is a monocultivar oil made exclusively from Moraiolo olives, a variety prized in central Italy for its intensity and grip. Viola farms organically using biodynamic principles, including intercropping with legumes to strengthen soils and limit yields. Olives are harvested early and milled immediately using a centrifugal press to preserve phenolic strength and aromatic definition. This oil reflects both varietal character and disciplined production.
Flavor & Texture
Decidedly green with notes of chicory, thistle, and fresh olive. Firm bitterness, persistent pepper, and a clean, structured finish.
