Pronounced GOO-ee-duhk, these giant clams are hand-harvested by divers just a stones throw from Wildfish off the nearby Island, Prince of Wales. They are dry-cured with a flavorful mix of salt, sugar, and house-secret blend of spices before smoking.

The resulting in a seafriendly product subs deliciously for bacon and with that in mind, we recommend stirring it into soft scrambled-eggs and topping with a dollop of Borsin and chives, or swapping for pancetta in your next smoky, seafood corn chowder.
