As a food source, ants are nutrient-rich and ecologically sustainable. Amazonian communities use them as a condiment in many preparations, ranging from soups to Tucupí-based sauces. Despite the abundance of protein, vitamins, and minerals that ants provide, this is an ingredient that many people in the West are unfamiliar with. Combined with chocolate they rise to the level of a gastronomic delicacy.
