A balanced, rich, and deeply umami base of sheep, goat, cows milks open this surprisingly bright and sweet cheese. Beautiful and powerful, the widespread marbling of mold is a product of piercing the cheese as it ages. Nestled in the verdant hillsides of Piedmont, Alta Langa has kept cheese in the family since their inception in 1880. Homemade cultures nurtured for generations give their cheese its unique and historical terroir.
