Ballerina Farm Brie-Style Cheese w/ Truffles, 4.8oz

$6.00

Out of stock

A small-format, bloomy rind cow’s milk cheese infused with black truffles. This Utah-made wheel is produced in Kamas using traditional soft-ripening techniques and local milk.

Craft & Origin

This cheese is handmade at the Ballerina Farm dairy in Kamas, Utah. The production process utilizes vat-pasteurized cow’s milk to create a delicate, lactic curd. Black truffle pieces are incorporated into the paste before the wheels are moved to the ripening room. During maturation, a thin white bloomy rind develops on the exterior. This rind facilitates the enzymatic breakdown of the interior, resulting in a transition from a firm core to a supple texture. Small-batch production ensures the ratio of truffle to cream remains balanced throughout each individual wheel. The result is a consistent, earthy profile that emphasizes technical precision over high-volume output.

Flavor & Texture

Notes of mushroom and damp earth. The texture is soft and spreadable with a thin, edible rind.

How to Use

Serve at room temperature on a neutral cracker or a crusty baguette.

Why We Like It

A reliable domestic truffle cheese that uses real truffle pieces to achieve a deep umami profile.
