Rich and full flavored sheep’s milk cheese is encrusted with rosemary, fennel seeds, juniper berries, and bird’s eye chile for a taste of Corsican summers.
Fleur du Maquis’ herb-packed rind gives way to a creamy, moist, and springy paste full of pleasant sour notes and grassy undertones made more complex by aromas from the herbs that permeate the paste while aging. One of our favorite ways to welcome the spring season or to reminisce about warmer days in the cold months.
