Rinci is based in Castelfidardo and focuses on the revival of Paccasassi, the local dialect term for sea fennel. This succulent grows wild in the crevices of limestone cliffs along the Adriatic coast. The producers cultivate the plant following regional traditions within the Conero Regional Park to protect wild populations and maintain historical continuity. To craft this red pesto, Rinci blends sea fennel with sun-dried tomatoes, tomato pulp, and almonds. The sea fennel is preserved in wine vinegar to stabilize its coastal salinity before being integrated into the tomato and extra virgin olive oil base.
