Milk from alpine pastures and barrel aging under Nebbiolo grapes (think Barolo wine!) create a sweet, semi-firm paste full of crunchy, wine-fruit complexity.
“Testun” means “stubborn” in the Cuneo dialect of northern Italy, a perfect descriptor for how challenging this cheese is to make.
