Caputo’s Double Skull Taleggio is the stinkier older brother to our regular cave aged Taleggio, but instead of getting washed in brine, our affineuse resuscitates each wheel in beer. Specifically, it gets washed up to three times a day in Epic Brewing’s Double Skull. This Doppelbock style beer is the perfect complement to Taleggio’s creamy funk. Some would say it stinks to the highest of the heavens, but we think it smells delicious. The stinky rind is the reason the paste of the cheese is so much richer and more savory.
Serve at room temperature for a potent table cheese or melt into risotto or polenta and pair with everything from oaked Burgundian Chardonnay to Doppelbock beers like Epic’s Double Skull.
