From the Val Taleggio in Lombardy, Italy, Taleggio is a soft-ripened washed rind cheese. After arrival, our affinuer resuscitates each square of Taleggio by hand washing the rind twice per day for the first week. Unlike our classic Taleggio, this Taleggio has its rind washed with Epic Brewing’s Double Skull Doppelbock from their Exponential Series. Epic’s Pilsner style beer is the perfect complement to the creamy, fruitiness that we all know and love in Taleggio. After three additional weeks in our 97% humidity cheese cave, our Taleggio arrives at it full potential.
Taleggio is characteristically aromatic and full in flavor, our Double Skull Taleggio is even tastier. The complex aroma and finish are deeper, move savory, and altogether delicious. Some would say it stinks to the highest of the heavens, but we think it smells delicious. That stinky rind is the reason the paste of the cheese is so creamy and sweet. Serve at room temperature for a potent table cheese or melt into risotto or polenta and pair with everything from oaked Burgundian Chardonnay to Italian Nebbiolo wines.
