Craft & Origin These sardines are sourced from the Atlantic waters off the coast of Galicia, a region shaped by cold currents, abundant plankton, and a deep conserva tradition. Ramón Peña selects exceptionally small sardines when texture and fat content are at their peak, then cleans and packs them by hand. The olive oil is used with restraint, serving to protect and preserve the fish rather than mask it.
