Six months of aging in Caputo's Cheese Caves gives Chabrin Reserve a softer, supple paste and newly developed toasty, caramelized nuance.

Grassy, caramelized, sweet and nutty flavors are balanced by subtle yet distinct goatiness and acidity in a dense, almost fudgy paste.
